Why coffee grind size matters
Grinding coffee changes how much surface area is exposed to water. A finer grind exposes more coffee and generally extracts faster; a coarser grind exposes less surface area and generally extracts more slowly.
If the grind is too coarse for your method, the cup can taste thin, sharp or underdeveloped. If it is too fine, extraction can become excessive and the result may taste bitter, dry or heavy.
Best grind size for espresso
Espresso normally needs a fine grind. The coffee bed needs to provide enough resistance for an espresso machine to push water through it under pressure while extracting flavour in a short period.
If the shot races through, try grinding finer. If the machine struggles and the shot barely flows, try grinding coarser. Make small adjustments rather than a huge change at once.

For a plunger, also known as a French press, start with a coarse grind. Because the coffee remains in contact with water for much longer than espresso, a fine grind can extract too quickly and may leave more sediment in the cup.

Best grind size for cold brew
Cold brew typically works best with a coarse grind. The coffee is in contact with cool water for an extended period, giving it plenty of time to extract.
Starting coarse also makes filtering easier. Very fine coffee can create more sediment and make the finished brew harder to separate cleanly.
